Annual Nut Sale

The Zonta Club of Columbus Fall Nut Sale Fundraiser  was officially launched on September 27 and ended on October 31.  Thank you to all Zontians who participated in the fall nut sale by purchasing and selling nuts to family, friends & neighbors.  This was a huge success and we met our 1/2 way goal for the year.  Watch for details as we will repeat the sale in the late spring...just in time for summer entertaining

Spiced Christmas Cashews

These cashews are sweet, salty & crunchy and put into a decretive container make a perfect Hostess Gift. Makes about 3 1/2 Cups

1 egg white

1T water

2 9 3/4 oz. cans of salted cashews

1/3 c Sugar

1T chili powder

2t Salt

2t Ground Cumin

1/2t Cayenne Pepper

Whisk together egg white and water in a large bowl. Add cashews; toss to coat. Transfer to a colander; drain for 2 minutes. In a separate bowl, combine sugar & spices; add cashews add toss to coat. Arrange a single layer on a greased 15"X10" jelly-roll pan. Bake uncovered, at 250 degrees for 1 1/4 hours, stiring once. Cool on a wire rack. Store in an airtight container.


Honey Popcorn & Cashews

This treat is hard to put down and always a hit. Makes 5 quarts

3 qts popped popcorn

1 1/2 c cashews

1/cup sugar

1/2 c honey (or agave syrup)

1/2 c light corn syrup

1c natural creamy peanut butter

1t vanilla extract

Toss together popped popcorn and cashews in a large roaster pan; keep warm in a 250 degree oven. In a heavy 1 1/2 quart saucepan combine sugar, honey & corn syrup. Bring mixture to a rapid boil over medium heat, stirring constantly; boil for 2 minutes. Remove from heat; stir in peanut butter and vanilla. Immediately pour over popcorn mixture, stirring to coat thoroughly. Spread on greased aluminum foil to cool. Break into bite-size pieces.
